Vegan "Beef" Lo Mein Stir Fry

  • TVP "Beef" Slices
  • 1 pack lo mein noodle
  • 2 cups bite sized vegetables
  • 2 tbsp sesame oil

Sauce Ingredients:

  • 3 tbsp dark soy sauce (or aged soy sauce, tamari, or strong broth)
  • 3 tbsp soy sauce (or low sodium soy sauce or liquid aminos)
  • 3 tbsp vegan mushroom oyster sauce (or hoisin sauce or soy paste)
  • 2 tbsp cooking wine (or vinegar for more intense flavor)
  • 1 tbsp organic white sugar
  • 1 tbsp chopped garlic
  • 1 tbsp chopped ginger
  • 1 tbsp water (for cornstarch slurry)
  • 2 tbsp corn starch
  • 1/4 tsp white pepper (or red pepper flakes or more spicy)

Prepping & Cooking Instructions:

  1. Soak TVP "Beef" Slices in water for an hour to hydrate
  2. Drain and squeeze out the beef TVP slices, rinse and repeat then set aside.
  3. Boil your lo mein noodles according to instructions, rinse until cold and set aside.
  4. Prep your veggies into bite side pieces and set aside.
  5. Whisk the ingredients for the lo mein sauce recipe together and set aside ready to add to the dish.
  6. Add a tablespoon of sesame oil to a hot pan and sear the beef TVP slices and set aside.
  7. Add a tablespoon of sesame oil to a hot pan and sauté the veggies, when cooked al dente add the beef TVP slices back to the pan.
  8. Add the noodles and sauce to the pan and toss to combine. Cook the lo mein and sauce until thickened.
  9. Remove from heat, plate and serve.
