I used Seitan Curls to make a batch of sandwich filling so I wouldn't need to cook again for a few days before the banquet of Thanksgiving dishes. The curls were soft, stringy, and chewy like beef. I used lots of sautéed baby bellas and onion slices, then made a rich au jus that the curls just soaked up. Piled on toasted rolls with vegan cheese, a slather of veganaise and horseradish. I can think of 20 ways I will use Seitan Curls in the future. I just bought two more bags!

These have a texture that's firmer than the kind of seitan that comes in a plastic container with a liquid, but a pleasant firmness, not excessively chewy. I reconstituted them with soy sauce, garlic & ginger in the water but didn't taste much of that so maybe I didn't use enough. Then drained and fried in olive oil (I gotta have my stuff fried!) til I had a nice crispy outside and tossed with pasta & broccoli (with more oil & garlic of course). Would definitely use again, as the fresh stuff can go bad fairly quickly.
